Peanut-Lime Rotisserie Chicken Noodle Salad
This noodle salad combines flat rice noodles, rotisserie chicken, shredded carrots, bell peppers, cucumber, and a peanut-lime dressing.
Ingredients
- 1 English cucumber
- 1 lime
- 160 ml peanut sauce
- 1 (30 oz) whole chicken rotisserie chicken, white and dark meat
- 1 (10 oz) bag shredded carrots
- 2 yellow bell peppers
- 2 tsp brown sugar
- ⅛ tsp crushed red pepper
- 10 oz flat rice (pad thai) noodles
- 2 tsp soy sauce

Fill a large pot about halfway with hot tap water. Cover the pot and bring the water to a boil over high heat.

Wash and dry the fresh produce—lime, yellow bell peppers, and English cucumber.

After the water boils, remove the pot from the heat. Add the flat rice (pad thai) noodles and soak them for 10 minutes or according to package directions. Drain the noodles in a colander, rinse them under cold water, and set them aside.

Juice the lime into a large bowl. Add the peanut sauce, soy sauce, brown sugar, and crushed red pepper. Whisk until the dressing is combined.

Trim and seed the yellow bell peppers. Slice them lengthwise into thin strips, then add them to the bowl containing the dressing.

Trim the English cucumber, quarter it lengthwise, and cut it crosswise into thin pieces. Add the cucumber to the bowl.

Place the chicken on a cutting board. Using your hands, remove the meat from the skin and bones and separate the meat into shred-like pieces. Add the chicken to the bowl.

Add the drained flat rice (pad thai) noodles and shredded carrots to the bowl. Toss to combine the noodle salad.
